It took me how long to figure this out?

So with all our cooking, Brad and I continued to be embarrassed by our "pan-searing." The food usually turned out okay, but always at the expense of our smoke-filled lungs.  We couldn't figure out how to get the stuff to not smoke so much. 
This is how:
Do not heat the oil up with the pan. Heat the pan up for about 3 or 4 minutes. Then add oil. Then add food immediately. Wow. It works great. Much less smoke. Much prettier food.

Ha Ha Ha Ha Ha - I have been having the same problem when I cook with oil and for me it was figuring out that if you only turn the heat to 6-7 NOT 9-10 then you don't fill the house up with smoke...yes, it took me months to figure THAT out!
